Specializing in Japanese cooking knives, this metalsmith is run by a fourth generation artisan, and continues to practice the traditional art of Japanese knife forging, where each piece is handmade by applying steel to the base metal. They proudly continue their business without compromise, having operated in Sanjo since the Muromachi Era. They also produce double-sided knives by applying traditional processes to new materials. During the festival, they will hold workshops in which visitors can try their sharp knives to slice various vegetables.
